Honestly, I haven't a clue. This sort of thing used to be done with salt, and it didn't produce nearly as good a result. Later, humans created something called 'refrigeration', which is a technology that chills food to prevent it from going bad, but that could hardly be called fresh, like what we have just purchased is.
